Preparation
Apricot muffins are a simple, delicious dessert for when you suddenly feel like something sweet or need to bake something “in a hurry.”
And if you live in Israel and use fresh apricots, don't throw away the pits! After all, as everyone knows, “onat ajuim” has begun here—the season for playing with apricot pits :) And your boys (or the neighbors' boys) will be happy to add to their collection :)!
Cream the butter with the sugar and vanilla sugar. Add the eggs and mix. Add the baking powder and flour, and mix into a batter that is not too thick.
Divide the batter into two portions, add the cocoa powder to one portion, and mix well.
Remove the pits from the apricots and dice them.
Spoon the dark batter into muffin molds greased with butter, filling them 1/3 full. Place the apricots on top. Spoon the light batter over the apricot layer.
Place in an oven preheated to 180 degrees. Bake for about 35-40 minutes, depending on your oven.
