Arayes is one of the stars of Israeli cuisine and the simplest way to make a delicious, satisfying dinner :).
Arayes is an Arab dish made by baking ground meat inside a pita (a flatbread). Classic arayes (עראייס) is made with ground veal, onion and spices. You can also use another kind of ground meat, such as lamb, or combine two...
Mix the ground meat with the finely chopped onion. Add salt, pepper and cumin to the meat. Mix again. Add cold water.
Fill the pitas with the meat mixture. Place them in a frying pan—or put them in the oven on the broil setting, or in a sandwich press for meat, if you're lucky enough to own one. When the fat begins to drip out, brush it over the pitas and continue frying/grilling.
Just about 15-20 minutes—and the arayes will be ready.
Serve with tomatoes and tahini, or whatever your heart desires.
