Preparation
Chocolate chip pancakes with cinnamon cream—I don’t know about you, but just the name makes my mouth water! Another great idea for Hanukkah :), especially for children.
In a large bowl, mix the sifted flour, sugar, baking powder, and salt.
In a small bowl, mix the milk, egg yolks, and 3 tablespoons of melted butter; add to the flour mixture, whisking until smooth.
In a small bowl, beat the egg whites with an electric mixer on medium speed until stiff peaks form. Gently fold the beaten egg whites into the batter. Gently fold the chocolate chips into the batter as well.
Melt 2 tablespoons of butter in a hot skillet. Using a ladle or whatever works for you (about 1/4 cup of batter per pancake), pour the batter onto the hot skillet. Cook for 2 - 3 minutes, or until bubbles appear on top and the edges turn golden brown. Flip and cook the pancake on the other side. Repeat with the remaining 2 tablespoons of butter and the remaining batter.
For the cinnamon cream: in a medium bowl, beat the cream with an electric mixer on medium speed until thickened. Gradually add the powdered sugar and cinnamon, continuing to beat until stiff peaks form. Cover and chill.
Serve the pancakes with cinnamon cream and maple syrup.
