Preparation
A super-simple, delicious recipe: cilantro not-quite-pesto, or cilantro pesto sauce.
Wash the cilantro, painstakingly inspect it :), and put it in a blender. Add salt, pepper, 2 cloves of garlic, toasted pine nuts, vegetable oil, and blend everything together.
Life hack: Toasting the nuts: heat a dry frying pan on the highest setting (if you have an electric stove) or over medium heat (if you use gas), add the nuts, and stir constantly until they turn golden and smell irresistible :).
This sauce can be used as a salad dressing, served with side dishes, meat, or fish, or simply spread on bread. We served it with trout—I recommend it!
