Diet-Friendly Falafel with Celery

Preparation

Falafel was originally an Arab dish, but it is so beloved in Israel that it has become a symbol of Israeli cuisine. Falafel refers to deep-fried balls made from legumes and seasoned with spices. Diet-friendly falafel with celery is baked in the oven instead of fried. I hope this recipe will be useful to you too!

Soak the garbanzo beans (chickpeas) in water for 12 hours (or overnight). Blend the uncooked, soaked chickpeas to a purée.

Chop the chili pepper, parsley, garlic, celery, and onions as finely as possible.

Combine the chickpea purée, herbs, celery, onions, and garlic. Add the baking soda, salt, and spices (cumin, coriander, and paprika).

Add the egg and sifted flour to the mixture and knead into a smooth dough.

With wet hands, shape the dough into small balls and refrigerate them for 2 hours.

Take the falafel out of the refrigerator and place them on a baking sheet (or in a baking pan) greased with vegetable oil.

Bake in the oven for 15-20 minutes at 180 °C until golden brown.

Variation: you can use breadcrumbs for breading instead of flour.
