Preparation
Eierzwiebel — Jewish egg salad — is a classic of Jewish cuisine. A traditional recipe for a Shabbat meal. You can use vegetable oil for frying instead of chicken/goose fat. You can add mayonnaise to the salad. But then it will no longer be the classic version :)
Peel the eggs, dice them, and mash them with a fork (this step can also be done on Shabbat itself!).
Finely dice the onion. Heat goose or chicken fat in a frying pan and fry the onion in it.
Mix the onion and eggs. Season with salt and pepper, and garnish with green onions.
Shabbat shalom, and enjoy your meal!
