Friday Chocolate Cake

Preparation

Friday Chocolate Cake (originally called Busy-friday-chocolate-cake) is my very favorite easy recipe. I have been using it for many years, and it has never disappointed either me or my guests. Children especially love it—it is that “foolproof choice” for every children's celebration. And if you spread chocolate on top and sprinkle it with colorful little candies, it becomes the pinnacle of culinary art—just ask any child ;).

And, something that matters for a large family—the recipe is designed to feed one! In other words, it really makes a lot of cake.

So, here is a chocolate cake you can make even amid Friday's pre-Shabbat rush:

Combine the oil, eggs, and sugar and beat. Add the dry ingredients one at a time, finishing with the freshly brewed, cooled coffee. Mix everything thoroughly with a mixer until smooth.

Bake at 175 ºC for about 45 minutes. (Check for doneness with a wooden skewer).

That's it!

Well, I strongly recommend decorating the finished cake with chocolate icing or whipped cream frosting, or even spreading some jam on top, but in reality, you may not have time ;)

(In the picture, the cake is decorated with an interesting, but dairy (!) chocolate glaze - 1 cup of milk chocolate chips, 1/2 cup of sour cream, and 1 teaspoon of vanilla essence. Melt the chocolate chips, add the sour cream and vanilla, and mix by hand until smooth and uniform. Decorate the cooled cake... well, more like half the cake ;-) ).
