Grandma's Pastry Rolls with Plum Preserves

Preparation

Grandma's pastry rolls with plum preserves, raisins, and walnuts... nothing in the world tastes better😋!

Every time I bake them, I remember her... she was an extraordinary mother, grandmother, and woman!

Quickly mix the egg with a little more than 1/2 cup of boiling water, add the melted margarine, add 1/2 teaspoon of baking soda that has first been mixed with vinegar, and work in 4-5 cups of flour (as much as the dough will take). The dough should feel lovely and should not stick to your hands, but it should not be too dry either...

Wrap the dough in a bag and refrigerate for 1 hour.

Prepare the filling: soak the raisins and chop the walnuts fairly finely, but not into crumbs. Add plum jam (preserves are too runny for this and will ooze out of the pastry during baking). I make the filling by eye and to taste; the main thing is for all the ingredients to stick together. My grandmother put everything into the dough separately (preserves, nuts, and raisins), but that takes a long time and makes no difference to the taste... so I mix everything together beforehand.

Take the dough out of the refrigerator and divide it into 4 pieces: roll each piece out very thoroughly on the table into a large round sheet, thin enough to see through (the thinner, the better). Cut this circle down the middle, brush the sheet with sunflower oil, and place the filling along the edge by the cut (not too much, and not in a thick layer, or it will be too sweet). Then roll it up into a tube and seal the ends so the filling does not leak out. Arrange the rolls on a baking sheet lined with parchment paper, leaving a little space between them, as the dough will rise slightly because it contains baking soda.

Preheat the oven to 180 degrees and, once a full baking sheet of long rolls is ready, place it in the middle of the oven to bake for 30-40 minutes.

The finished rolls should be lightly golden, with thin, completely dry pastry that crumbles like shortcrust pastry as you eat it and is barely noticeable.
