Preparation
Tuna rolls with citrus slaw are delicious :) These homemade sandwiches combine great taste with health benefits, and you know exactly what’s in them ;) !
To prepare the citrus slaw:
Place the shredded cabbage in a large bowl and toss with 1 tablespoon of sugar and half a teaspoon of salt. Mix, cover, and refrigerate for half an hour to let the cabbage release its juices. Before adding the dressing, add the finely chopped parsley to the cabbage.
Mix together the mayonnaise, mustard, lemon and lime juice, the remaining half tablespoon of sugar, half a spoonful of salt, poppy seeds, and freshly ground black pepper (you can put everything in a jar, close the lid, and shake well until combined). Pour the dressing over the cabbage and mix thoroughly.
Tuna patties:
Finely chop the celery, chili pepper, and garlic. Heat the olive oil in a skillet, add the chopped vegetables, celery seeds, and seasonings, and cook gently for 3-4 minutes. Let cool.
Drain the tuna and mix with the breadcrumbs, chopped parsley, cream, mustard, finely chopped scallions, and beaten egg. Add the cooled vegetable mixture and stir until evenly combined.
With floured hands, shape the mixture into small patties. Coat them in flour and place in the freezer for 10 minutes to help them hold their shape.
Heat the oil (175°C) in a large skillet and fry the patties until crisp, 5-7 minutes. Place on paper towels to remove excess oil.
Split the rolls through the middle, put a patty in each, and top with a little citrus slaw.
