Preparation
Pancakes with ice cream are a true weekend recipe, because only on a day off could you get the idea of making pancakes, then pairing them with vanilla ice cream—and putting yourself in a good mood for the whole day!
p.s.: and for those familiar with the phrase "a dairy melaveh malkah," this recipe automatically becomes a recipe for Motzaei Shabbat :)
In a large bowl, combine the sifted flour, sugar, baking powder, and salt.
In a small bowl, combine the milk, egg yolks, and 3 tablespoons of melted butter; add to the flour mixture, whisking until smooth.
In a small bowl, beat the egg whites with a mixer on medium speed until stiff peaks form. Gently fold the beaten egg whites into the batter. Gently fold the chocolate chips into the batter as well.
Melt 2 tablespoons of butter in a hot skillet. Using a ladle or whatever is convenient for you (about 1/4 cup of batter per pancake), pour the batter onto the hot skillet. Cook for 2 — 3 minutes, or until bubbles appear on top and the edges turn golden. Flip the pancake and cook the other side. Repeat with the remaining 2 tablespoons of butter and the remaining batter.
Arrange the pancakes on individual plates. Dust lightly with powdered sugar. Place 2-3 scoops of vanilla ice cream on each one.
If desired, drizzle with chocolate syrup and garnish with whipped cream.
Enjoy your meal!
