Sweet potato latkes—a recipe we tried for the first time this Hanukkah. And I am very pleased with the result! The latkes were sweet without any sugar, had a crisp crust, and were a huge hit, so I recommend them! If you do not have soy sauce (as we did not at home), simply increase the number of eggs, and (if necessary) add a couple more spoonfuls of breadcrumbs.
Peel the sweet potatoes and coarsely grate them. Mix the sweet potatoes with the egg, a crushed clove of garlic, soy sauce, breadcrumbs, and a pinch of salt to make a thick mixture.
Drop tablespoonfuls into a heated frying pan (with enough oil to keep the latkes from burning), and fry on both sides until golden brown.
If the latkes fall apart (as ours did at first, possibly because there was no soy sauce in the mixture), add another egg and more breadcrumbs until the mixture becomes thicker and stickier.
These sweet, crisp sweet potato latkes go especially well with a light vegetable salad! :)
Enjoy your meal!
