Preparation
Tunisian honey pastry twists, shaped like little roses, could not be more fitting for the Hanukkah table, as the candles burn and the family sings together the lines from “Maoz Tzur”: u-mi-notar kankanim - na'asah nes la-shoshanim... (“but with one remaining jug, a miracle was performed for those who are compared to roses”). Happy Hanukkah!
Beat the eggs, add the flour, and knead into a fairly stiff dough. Roll the dough into thin sheets and cut them into long ribbons. Then wrap each ribbon around a fork in a spiral, quickly fry in boiling oil until golden, and drain on a napkin.
Mix a cup of water with the honey and lemon juice, bring to a boil, but do not let it boil.
Dip the pastry twists into the prepared syrup, let them cool, and serve.
Enjoy your meal, and have a happy Hanukkah!
