Preparation
The most original, delicious, and healthy—vegetable latkes, of course. They have everything except potatoes! A light recipe in every way—for a light and joyful Hanukkah meal!
Lightly beat the eggs with pepper, salt, and a drop of vegetable oil. Coarsely grate the peeled carrot, parsnip, and onion. Mix the vegetables and egg. Add the flour to the vegetable mixture and mix thoroughly—that's it! All that's left is to fry them.
Spoon the vegetable mixture into the hot oil. Fry on both sides until golden.
You can place the cooked latkes on a plate lined with a paper towel to absorb the excess oil.
Mix the sour cream with finely chopped dill or other herbs, and serve with the vegetable latkes.
B'teavon! Enjoy your meal!Kitchen measures
