Preparation
Warm potato salad with halloumi is simple and inventive; the main secret of this salad lies in its dressing. Warm salads are a wonderful idea for a winter menu: they are hearty and easy to prepare. The potatoes in this recipe can be replaced with sweet potatoes. The addition of pan-fried halloumi gives the salad a Mediterranean touch and turns it from an appetizer into a main course.
Peel the potatoes and cut into 5 cm cubes. Cook in boiling water until tender but still holding their shape. Drain in a colander, rinse, and set aside.
Finely chop the onion. Halve the cherry tomatoes. Place the potatoes, onion, and tomatoes in a large bowl. Pour over the dressing and toss gently.
Place all the dressing ingredients except the oil in a jar. Shake well, add the olive oil, and shake again.
Cut the cheese into small cubes. Just before serving, fry the cheese in a little olive oil and scatter it over the salad along with the capers.
Garnish the salad with mint or basil leaves and serve.
